Egg Drop Soup with Kale

It’s a great feeling when you can make an entire new dish with ingredients you already have on hand, and especially when they’re lots of leftover ingredients that you’re trying to clean out of the fridge.

I wanted something healthy with protein but couldn’t buy anything new since I was moving soon. The solution was egg drop soup with beef stock that had been sitting in my freezer and that last tiny nub of fresh ginger that was next to it. I added a clove or 2 of garlic, and to get some green I boiled kale in the stock til it softened, then dropped in 2 eggs.

It was great to see that this simple bowl was just as good with beef instead of chicken stock and the addition of the kale.
